Stir fry salad on a summer day
While the rains have been upon us on and off for a few weeks now, there come days when the clouds clear, the sky turns bright blue and the sun bounces off the green foliage, a reminder of the glorious summer days (sans the heat) gone by. And on such days, all you want to do is bring out your lounge chair under the warm, fuzzy sun and curl up with a comic strip or the daily news paper. Well, maybe some good food as well.
I made this summer salad a few days back, perfect as a side dish for lunch or a late afternoon snack. light and easy to make, it was ideal for a late sunny afternoon cheat bite, without taking the "healthy" out of it. @Nupur - If you are reading this, thank you for the recipe! - Broccoli - 2 Heads – washed and branched into small florets
- Tofu/ Paneer/ Cottage Cheese - 100 gm – cut into small cubes
- Garlic - 8-10 cloves – peeled and finely chopped
- Butter & cooking oil - 1 Tea Spoon
- Salt and pepper to taste
Boil water on a stove, add salt and then toss the small
broccoli florets into it for 1 min. scoop out the florets into a strainer and run it under cold/regular water.
Heat a pan on the stove and add the
butter. Add the chopped garlic once the butter is melted and hot. Fry till
golden brown and add the boiled broccoli to it. Drizzle some oil over it and
stir for 6 - 8 min. Once the broccoli is cooked, add the tofu/paneer to it. Add
salt and pepper according to taste and stir for another 3-4 min. empty the
contents of the pan into a bowl and serve immediately.
