Carrot & Zucchini Pesto Pasta



I This is the first of the many experiments to come this week. ZOODLES PASTA!!! This has got to be the healthiest, easiest, most innovative and delicious salad - pasta I've ever made. Now iI know you can't see any noodles in the the bowl....but read on.

1. Healthiest because - This dish is only made up of different vegetables and a bit of cheese, olive oil and butter. Some almonds as well.

2. Easiest because - this dish took me less than 15 minutes to make! 

3. Most innovative because - Zoodles are spiralised veggies. I don't have any fancy spirializer device. Used the regular vegetable scraper to make zoodles (Pic below for reference) 



4. Delicious because - well I can't prove this but you'll have to take my word for it. I made a small batch of this dish as I had already had some left over dinner but god do I regret not making more of it. Recipe given below!

Ingredients
(makes a small bowl, double the quantity for a larger serving)

1 carrot
1 green zucchini
4-5 cherry tomatoes
3-4 black olives 
2-3 pods of garlic
a big handful of basil leaves
1 small onion
4-5 dry toasted almonds
1 teaspoon olive oil
half a teaspoon butter
a small cube of cheese 
Salt to taste
Chilli flakes
water

For the Zoodles - wash the carrot and Zucchini thoroughly. Using a vegetable scraper, scrape the skin of the carrot. Cut off the ends and discard. Now using the scraper, scrape long strands of the carrot. Start from the top of the carrot, putting some pressure on the scraper. Repeat the same process for the Zucchini.

For the pesto - In a mixer, add the garlic pods, basil, cheese, almonds. salt and olive oil. Blitz it till it turns to a smooth paste. Set Aside

Heat a pan, add the butter and once hot, add finely chopped onions. Stir till golden brown and then add the zoodles. Let the zoodles cook for 2-3 min till semi soft. Add the pesto to it and cook for another minute. Add more salt if needed. Transfer contents into a bowl, and garnish with chopped cherry tomatoes, sliced olives and chilli flakes.

Serve immediately.
