Instant Pot - Pudina Rice Recipe (Mint Rice)
My love for Instant Pot recipes are pretty obvious by now. If you are new to Instant Pot, here's a quick summary - Instant Pot is an electric cooker much like a pressure cooker, except that it is faster, more flexible and hands free (No whistles, no need to keep a watch).The Instant Pot is especially handy when you need to make quick meals without having to watch over the cooking process. I have been using it for over 6 months now and absolutely love it! Easily one of the most productive appliances in my kitchen.
Today I bring to you the recipe for this one-pot Pudina Rice (Mint Rice). While there are many different ways to make this, I particularly like this version as it brings out the flavor of the mint leaves the most. The recipe includes mostly pantry staples and comes together in 25-30 minutes. You can serve this flavorful rice with any Indian curry or Raita.

Ingredients
1.5 cups Basmati rice washed and soaked in 3 cups of water
2 Tbsp oil (I use sunflower oil)
1 tsp Jeera
1 medium sized red onion Julienned
2 garlic pods chopped
2-3 chillies slit vertically
a large packed cup full of mint leaves finely chopped
100 gm fresh/frozen peas
Salt and Pepper to taste
1 tsp ghee
Switch on the Instant Pot and program the saute mode. Add oil and once it heats up, add the jeera, garlic and chillies. Saute for a minute and then add the onions and salt. Let the onions brown a bit and then add the chopped mint leaves and peas. Saute for another minute and then add the pepper. Now add the soaked rice while holding onto the water. Also add the ghee and saute the rice for a 1-2 min till the rice turns fragrant. Now add the water and check to see if more salt is needed. If so, add accordingly. Now cancel the saute mode and close the lid. Program the rice mode and switch it on. Once done, release the steam manually and open the lid. Fluff the rice after a minute and then serve hot.
