Recipe - Hearty Tomato Soup

 

Soup season is here! And there's no better way to kick start it than a hearty comforting bowl of tomato soup with some warm toasted bread! 

I love soups as an appetizer and sometimes as a full meal in itself. I started making soups a bit late this year but I have had some lovely friends dropping in with big bowls of soup for us. Today after a rather heavy breakfast and a quick walk in the park, I was feeling peckish but really didn't want to spend too long in the kitchen slogging out a meal. I remembered this quick 15 min tomato soup I had made last year and I jumped onto making it.



Okay guys, let me tell you this. This soup literally takes about 20 min in total to make out of which 15 min is the oven time. Wait what? As in only five minutes of prep and done!?! Yep that's it! It cannot get better than this, can it? 


So here's my 3 step hearty tomato soup - a bowl of warmth that is perfect for these cold gloomy winter days!


Hearty Tomato Soup Recipe

(Makes 2 bowls)

Ingredients:

4 large tomatoes diced (preferably firm tomatoes)

3-4 pods of garlic peeled and sliced

1 medium sized potato peeled and diced

1 tsp dried basil leaves (a handful of fresh basil if you have them handy)

1 tsp olive oil

salt and pepper to taste

A pinch of sugar

1 cup water


In a baking tray, add the diced tomatoes, potato, sliced garlic and basil. Top the olive oil and mix well. Roast them at 400F for 15 min. Pull the tray out and let it cool. 





Then add all the contents into a blender/mixer and blend till it forms a smooth paste. Transfer the contents into the pan, add the sugar and salt and pepper to taste. Add water as needed to adjust the consistency. Once the soup starts to boil, switch off the stove and serve with some warm toasted bread!
